CDO Sweet Ham on My Summer Italian Pasta Salad

A household staple, CDO Sweet Ham is one of my favorite all around easy to cook meals. From the simple ham and rice tandem to an omelette surprise, sandwich or pasta– you name it! You can really eat it with anything. I love how it so meaty, delicious, and has a balanced sweetness and saltiness at the same time.

Since we’ve been home for 100+ days and it seems like everyday is already a weekend, I tried to make our Saturday, #WeekendsUpgraded by tossing pasta, tomatoes, olives, home made Italian dressing and our favorite CDO Sweet Ham in a bowl.

Sharing with you this very simple recipe that made our weekend even more special – Summer Italian Pasta Salad, since it still feels like summer!

Pasta Salad Ingredients:

3 cups uncooked pasta (I used San Remo’s Trivelle)
3 cups cherry tomatoes, cut in half
1 cup mozzarella cheese, cut in cubes (if block cheese)
1 250g pack CDO Sweet Ham, cut into squares
3/4 cup black olives, sliced
1/2 cup red onion, minced or sliced
1/2 cup fresh parsley, chopped

Italian Dressing:

1 1/2 cups olive oil
1/4 cup white vinegar
1/4 cup water
2 tablespoons sea salt
1 teaspoon garlic powder
1 tablespoon sugar
2 teaspoons dry oregano
2 teaspoons dry basil
Black pepper
Optional parsley, basil, or chives.

INSTRUCTIONS

1. Cook pasta then toss into a bowl.

2. While cooking the pasta, you can mix together the Italian dressing ingredients. It is better if you use a blender.
3. Toss all ingredients together and pour the dressing.

You can add other veggies like beans, pepper, chickpeas, different type of cheese and use a different pasta shape. You can do anything with this. I love how this recipe is sooo flexible like CDO Sweet Ham.
